01 / ABOUT THE PLACE

About this place

In the niboshi soy ramen, a soy-based broth carries a gentle dried-sardine aroma. As you eat, you can stir in Nibokun, a fish-shaped paste made from dried sardines. The base has the depth of iriko stock, and the paste gradually blends in, bringing the dried-sardine notes further forward. The flavour shifts with each mouthful—a distinctive feature of 中華そば啞不魯(アフロ). Hand-kneaded-style curly noodles and thicker noodles both hold the broth well, with a satisfying bounce that comes through as you chew.

There are choices beyond dried-sardine ramen, too, making it possible to choose according to the mood of the day. The back-fat soy ramen blends three kinds of soy sauce. Its back fat brings a mellow sweetness without making the bowl feel heavy, while the finish stays crisp. Other distinctive options include wonton ramen topped with plump shrimp and meat wontons, aromatic shrimp soy ramen, and tantanmen seasoned with Sichuan pepper and mā-yu, or roasted garlic oil. Add-ons such as seasoned egg, with its rich, flavourful yolk, offer another way to tailor a bowl to your taste.

The calm interior is arranged mainly around counter seating, making it an easy place to drop in alone. Orders are placed at a touchscreen ticket machine, and payment is cashless only, with credit cards, QR-code payments and transport IC cards accepted. That can make for a quick stop even when you have no cash on hand. On weekdays, the restaurant stays open late, offering a reassuring option for a hot bowl after a late finish at work.
